Chicken Black Bean Soup

4 boneless, skinless chicken breast 
5 cups low sodium chicken broth or water
2 carrots, peeled and sliced
1/2 onion,chopped
2 tomatoes,chopped
3 to 5 cloves garlic,crushed
2 16-ounce cans low sodium black beans , rinsed and drained 
1tablespoon fresh oregano leaves or 1 teaspoon dried oregano 

Directions : 

1. In a large  pot, put the chicken breast, broth or water. Carrots ,tomatoes ,onion,garlic ,and seasoning. Cover and bring to a boil,reduce heat,and simmer for about 20 minutes or until done.

2. Remove the chicken pieces from the broth and set aside , to cool. Keep the broth warm over low heat.

3. Dice the chicken into small pieces . Return it to the soup and  heat it through. 

4.Garnish with grated cheese and red pepper flakes, if you like to
